We arrived in Kings Mountain last night in preparation for Jed’s triathlon today. Mattie Windsor provided excellent team support as she helped her Daddy set up his first transition zone.

It was the perfect Mother’s Day. I spent the day at home with Jed and Mattie Windsor and mostly worked in the yard. Jed served me the most amazing brunch of prosciutto wrapped asparagus topped with a poached egg, pineapple and mint salad, smoked salmon with Ezekial bread, and French sparkling wine. I was a very happy mama!

I have been drooling over these antique industrial rolling carts for the past two years but have struggled to find a way to justify the high price tag. (As much as I love Restoration Hardware, it is not in our budget.) So when Jed found a local supplier with reasonable prices on craigslist, I was absolutely giddy. The warehouse was located a quick five minute drive from my office, so I enlisted the help of a friend and co-worker and picked up this beauty last Friday during my lunch break.
Our antique Lineberry factory cart is constructed of oak and cast-iron and was crafted in North Wilkesboro, North Carolina during the early 1900s. With the addition of a few nails to secure a couple of loose boards, our new cart is ready to serve as our coffee table for years to come.

Baseball season right!
Well, not really, but opening day was not that long ago so I guess I can still use the same analogy. Still confused?
We all know life can sometimes throws you a nasty curveball. One of those that you never see coming and you are completely unprepared to deal with. My family had one of those come our way just about twelve years ago when my father (Eddie) was diagnosed with bladder cancer. Easy Eddie, as he was aptly named for his easy-going approach to life, fought hard but eventually lost his battle just over a year and a half later in December of 2000.
Last year marked to first year we participated in the national “Walk for Bladder Cancer Awareness” and hosted friends and family at my sister’s house Hillsborough, NC. It was a day that Easy Ed would have been proud of. Good food, good beverages, and even better company. This year we have decided to up the ante and set a donation target of $500 to the Bladder Cancer Advocacy Network (BCAN) who is responsible for promoting bladder awareness throughout the nation. The post walk festivities have also been kicked up a little bit as well.

By no means do I expect a donation of any type, but if you are free Saturday, May 5th we would love to have you come to Hillsborough to celebrate the Easiness of Eddie Hurt. Jed and I arrived safely in Los Angeles last night. After checking into our hotel in Pasadena, our first stop was the drive thru at the nearest In-N-Out Burger. We were ravenous and the two minute drive back to our hotel with our “animal-style” cheeseburgers was pure torture. But it was all worth it. We drank a 2005 bottle of Silver Oak Cabernet Sauvignon with our $8 meal. It was pure bliss.

Our little girl officially turned two on Friday, so it was only appropriate that we celebrate her second trip around the sun with a proper birthday party. The Hurts love a theme and this year we selected one of Mattie Windsor’s favorite books, The Very Hungry Caterpillar by Eric Carle.
The decorations consisted of a giant caterpillar composed of homemade tissue paper pom poms, place cards with illustrations and quotes from the book (that later doubled for thank you notes), and of course Mattie Windsor’s masterpiece that she painted herself (Four More Days . . .). Staying true to our inspiration, we served apples, pears, plums, strawberries and oranges to incorporate all of the fruits on which the caterpillar dined throughout the week. We also served pickles, Swiss cheese (in the form of a ham and cheese biscuits), and cupcakes to represent the caterpillar’s eating extravaganza on Saturday.
And of course there was a craft project (this is project hurt … duh?!). We gave the children green paper leaves and cotton pom poms to make their own caterpillars to take home.
Mattie Windsor thoroughly enjoyed the spotlight and a good time was had by all. We even managed to raise a little dough for SECCA (Southeastern Center for Contemporary Art) here in Winston-Salem. Gifts are fun but experiences are even better, so we asked our friends and loved ones to make donations to support a local museum in an effort to further encourage and inspire our little artist.

This year our sous chef, Mattie Windsor, helped Jed and I make a few confections for her teachers and other local friends. We made raspberry thumbprint cookies, chocolate covered graham crackers sprinkled with peppermints, and chocolate covered pretzels. Mattie Windsor already shares her mother’s love for cookie dough and was an excellent assistant in the kitchen.
